Roast Chicken

 

This recipe is incredibly simply and so nourishing.  Add some foil wrapped sweet potatoes to the oven while the chicken roasts and you have a wonderfully simple, healthy meal.

1 large Heartland Family Farm pasture raised chicken

5 carrots, chopped into 2 inch long pieces

5 celery stalks, chopped into2 inch long pieces

1 large sweet onion, quartered

5 garlic cloves

1/2 cup olive oil

freshly ground salt

freshly ground pepper

1 T crushed red pepper

5 sprigs fresh rosemary (approx 5 in long)

 

Rinse chicken and brine overnight (dissolve sea salt in cold water add freshly ground pepper and mix well. Submerge chicken in brine).

Preheat oven to 350*.

Rinse chicken, again, after brining, and place in roasting pan.  Place carrots, celery, onion and garlic alongside chicken in pan. Pour 1/2 cup olive oil over chicken and vegetables. Sprinkle with freshly ground salt and pepper.  Add crushed red pepper.  Place Rosemary sprigs on top of chicken.

Roast chicken for 1 – 1 1/2 hours
