The name David Tallent is synonymous with the very best, locally prepared food. He and his wife, Krissy, both classically trained chefs, owned Restaurant Tallent for 12 years. Dave came to the Saturday Farmers Market, buying the freshest and most interesting fruits and vegetables from our local farmers many years – long before it was the trendy thing to do. He did it because he knew the best way to prepare incredible dishes was to have the freshest ingredients possible. As he came back week after week to our booth, he began to teach us how to have an eye for fruits and veggies that would add interesting variety to our Midwestern palettes. We began to search out European and heirloom seed varieties for their incredible flavor. Not only did he redirect the types of produce we were growing, he opened for us an entirely new aspect of farming – selling directly to chefs.
